
Makes 6 slices
Because I love cheese, mushrooms and sourdough bread, I have combined all three in one simple recipe. I have used brown mushrooms because I had some in my fridge, but you can use any variety of mushrooms. Simple and delicious!
Ingredients
250g brown mushrooms, finely sliced
2 tbsp olive oil
2 garlic cloves, mashed
1 tsp dried thyme
2 tbsp tamari or soya sauce
6 slice of sourdough bread, lightly toasted
140g cheddar cheese, coarsely grated
125g mozzarella cheese, coarsely grated
Method
Add the mushrooms and the olive oil in a frying pan. Stir to mix and fry on a high heat for 4-5 minutes or until the mushrooms become juicy. Add the garlic and stir for couple of minutes before adding the tamari and thyme. Keep stirring for a minute (do not let all the mushroom juice evaporate).
Mix the cheddar and mozzarella cheese in a bowl before dividing the cheese mixture evenly on top of the sourdough slices. Don’t worry if it looks like there is too much cheese on the bread slices; it will melt down into the bread once you grill it.
Place under the grill until the cheese is fully melted.
Top with the fried mushrooms, adding some of the mushroom juice also.
