When I want a healthy snack, I make these chocolate truffles. WARNING, there are addictive... 😊. They are easy to make and they can be stored in a sealed container and refrigerated for up to 5-6 days.
Ingredients
40g pistachio
40g walnuts
40g hazelnuts
40g almonds
40g peanuts
400g fresh pitted dates
100g peanut butter, unsalted
½ tsp ground cinnamon
1 tbsp vanilla extract
40g raw cacao powder, plus some for dusting
Method
Place all the nuts in a food processor and blitz until finally chopped. Set aside in a small bowl.
Place the dates, peanut butter, cinnamon, vanilla extract and cacao powder in the food processor and blitz until the dates are fully chopped and soft. Add the chopped nuts back to the date mixture in the food processor and process for 2–3 minutes or until the ingredients are fully mixed.
Roll 2 tablespoons of the mixture into balls and dust with the extra cocoa or roll in extra cacao to coat.
